Boppers (Peanut Butter Granola Bites)

Ingredients

  • 3/4 cup creamy peanut butter (180 g)
  • 3 tablespoons butter, softened
  • 1/2 cup powdered sugar (60 g)
  • 3 pouches Nature Valley oats ’n honey granola bars (from an 8.9 oz box), crushed
  • 1/4 cup semisweet mini chocolate chips
  • 1 tablespoon coconut oil
  • 5 oz chocolate-flavored candy coating

Method

  1. Beat the peanut butter and softened butter in a large bowl until blended. On low speed, beat in the powdered sugar until well combined; knead by hand if needed.
  2. Shape into a ball, divide in half, and form two 12-inch logs. Cut each log into six 2-inch rounds. Cover and refrigerate 30 minutes.
  3. Crush the granola bars in a resealable bag with a rolling pin. Transfer to a shallow bowl and stir in the chocolate chips.
  4. Line a tray with parchment. Microwave the candy coating on high for 60–90 seconds, stirring until smooth.
  5. Working with a third of the rounds at a time, dip and roll each in the melted coating using two forks, letting the excess drip off. Immediately press into the granola mixture to coat.
  6. Store covered in the refrigerator.
